Salsa Romana

Found this on my desk and added it to the site. It was not dated but it is in Rooney’s handwritting

Ingredients:

  • 8 Roma tomatoes, (1 lb) Diced
  • 3 tablespoons finely diced red onions
  • 3/4 cup julienned basil leaves
  • 1 teaspoon finely minced garlic
  • 3 tablespoons extra virgin olive oil
  • 1 teaspoon salt

Directions:

  1. Thouraly combine all ingredients together in a mixing bowl
  2. Allow to sit at room temperature for 1 hour before serving.

Note:

Yields about 3 cups
