Crawfish Quiche

  1. Preheat oven to 350 degrees
  2. In a saucepan, melt butter over medium-high heat
  3. Add onions and cook until tender
  4. Add garlic and season to taste with salt and cayenne pepper stirring occasionally
  5. Add crawfish tails and cook about 1 minute
  6. Remove from heat and let cool
  7. In a large bowl, combine eggs, cream, Tabasco, Worcestershire, chives and salt to taste, whisking to mix well
  8. Set egg mixture aside.
  9. Place prepared pie crust in a pie pan
  10. Spread cooled crawfish mixture on bottom of pie crust , top with egg mixture then sprinkle evenly with Parmesan and Cheddar cheese
  11. Bake 50 minutes to 1 hour or until set
